Recently, I noticed that there are lots of avocado pear sold almost everywhere and cheap as well. The season I guess because I got like 4 medium seizes for N200 for my cousin’s wife. And my cousin came home one of the days with over 20 of them.  Trust me, I like to be experimental with the available to create something different. This salad is one.

Yummy Yummy, i made a large bowl of it at my cousin’s house two weeks ago and everybody enjoyed it. Am going to be making more of it because it’s healthy and a good variety to help weight maintenance.

INGREDIENTS FOR AVOCADO CUCUMBER SALAD

This salad is loaded with veggies; juicy tomatoes, cucumber, red onions, creamy avocado, homemade coconut oil and lime juice to make the whole salad so fresh and flavorful.

INGREDIENTS BY QUANTITY

3 Medium tomatoes

2 Medium cucumber

2 Medium avocado pear

2 Cooked Eggs

1 Large red onions

2 Tablespoon fresh lime juice

2 Tablespoon original coconut oil or olive oil

I Teaspoon sea salt or ¾ teaspoon table salt to taste

½ Teaspoon black pepper

HOW TO MAKE AVOCADO CUCUMBER SALAD

  1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced eggs and diced avocado into a large salad bowl.
  2. Drizzle with 2 tablespoon coconut oil and 2 tablespoon lime juice. Toss gently to combine. Just before serving toss with 1 teaspoon sea salt or 3/4 table salt and 1/2 teaspoon black pepper.

This salad can be made all year long, but it’s especially delicious this time of year when avocados and cucumbers are in season.
